Semolina: Gnocchi “a la Romana”


  • 1 1/2 lts. of milk
  • Tomato sauce
  • 300 gr. of Semolina
  • 50gr. of Butter
  • 4 tablespoons of grated cheese
  • 2 eggs
  • Salt, pepper and nutmeg


Pour the milk in a pot, heat over fire and once it begins to boil sprinkle the Semolina into it and stir. Cook for five minutes, then remove from the heat and season with salt, pepper and nutmeg. Add the eggs and stir. Stretch the dough on a flat surface coated with oil. Leave to cool, cut in medallions and place in a oven pan coated in butter; sprinkle with grated cheese between each coat, and spatter with tomato sauce. Gratiné in oven.
