Ingredients:
- 3 mugs of Lima Beans
- 1 red pepper
- 1 large onion
- 1 carrot
- 3 shallots
- 1 mug of wine vinegar
- 3 mugs of oil
- 1 teaspoon of chilli powder
- Salt, peppercorn and bay leaves
- Aromatic herbs (basil, oregano, sage…)
Preparation:
Soak the beans overnight, change the water then boil with salt until they are tender, then drain. Separately, chop the pepper into strips, the onion into rings and the carrot into slices. Peel the shallots and keep them whole. Leave the vegetables in boiling water for 1 or 2 minutes, then drain. Place the beans, the vegetables, the chilli powder, the bay leaves, salt, pepper, and the herbs into a pot. Cover with the vinegar and oil. Heat and leave it to boil 2 minutes. Cool before serving.
