Cornmeal (quick cooking): Polenta

Preparation:

In a pot boil 3 parts of water or milk. Add one part “Elio” Cornmeal sprinkled over, and stir until smooth. Cook for two minutes while stirring. Season to taste. It can be served with two tablespoons of oil or fresh cream, or with tomato sauce and grated cheese.
